Using organic vegetables and ingredients enhances the flavor and nutritional value of these spring rolls and supports sustainable farming practices. Organic farming methods prioritize soil health, biodiversity, and environmental sustainability, resulting in produce free from synthetic pesticides and fertilizers. By choosing organic ingredients, you're making a conscious choice to prioritize your and the planet's health.
The beauty of rainbow veggie spring rolls lies in their colorful assortment of fresh vegetables. Think vibrant red bell peppers, crisp orange carrots, crunchy green cucumbers, and more. By incorporating a variety of colorful vegetables, you create an eye-catching presentation and ensure a diverse array of nutrients and flavors in each bite. Feel free to get creative and use whatever colorful vegetables you have or whatever is in season.
Ingredients:
For the Rainbow Veggie Spring Rolls:
Eight rice paper wrappers
One medium organic carrot, julienned
1/2 organic cucumber, julienned
1/2 organic red bell pepper, thinly sliced
1/2 organic yellow bell pepper, thinly sliced
1/2 cup purple cabbage, thinly sliced
1 cup mixed organic greens (such as spinach, kale, or lettuce)
1/4 cup fresh cilantro leaves
1/4 cup fresh mint leaves
Optional: cooked shrimp, tofu, or rice vermicelli noodles
For the Organic Peanut Dipping Sauce:
1/4 cup organic peanut butter
Two tablespoons organic soy sauce
One tablespoon lime juice
One tablespoon organic honey or maple syrup (for a vegan option)
One clove garlic, minced
One teaspoon grated fresh ginger
Water, as needed, to thin the sauce
Instructions:
- Prepare the Vegetables:
Wash and julienne the carrot and cucumber. Thinly slice the red and yellow bell peppers and purple cabbage. Rinse and dry the mixed greens, cilantro, and mint leaves. Set aside.
- Prepare the Peanut Dipping Sauce:
In a small bowl, whisk together the organic peanut butter, soy sauce, lime juice, honey (or maple syrup), minced garlic, and grated ginger until smooth.
If the sauce is too thick, gradually add water, one tablespoon at a time, until it reaches your desired consistency. Set aside.
- Soften the Rice Paper Wrappers:
Fill a shallow dish or large bowl with warm water. Dip one rice paper wrapper into the water and rotate it for a few seconds until it becomes soft and pliable. Remove it from the water and place it on a clean work surface like a cutting board.
- Assemble the Spring Rolls:
Arrange a small handful of mixed greens in the center of the softened rice paper wrapper, leaving some space around the edges.
Add a few strips of each vegetable to the greens and a few leaves of cilantro and mint.
Add a piece of cooked shrimp, tofu, or a small amount of rice vermicelli noodles on top of the vegetables if desired.
Fold the bottom edge of the rice paper wrapper over the filling, then fold in the sides and roll tightly to enclose the filling like a burrito. Repeat with the remaining ingredients.
- Serve with the Peanut Dipping Sauce:
Arrange the rainbow veggie spring rolls on a serving platter and serve with the organic peanut dipping sauce on the side.
Garnish with additional fresh herbs or a sprinkle of sesame seeds, if desired.
Enjoy these vibrant and nutritious spring rolls as a light, refreshing meal or appetizer!
Additional Tips:
To prevent the rice paper wrappers from sticking together, place a damp or clean kitchen towel between each layer of rolled spring rolls when storing them.
Feel free to customize the filling with your favorite vegetables, herbs, or protein options.
If you're making the spring rolls ahead of time, store them in an airtight container in the refrigerator for up to one day. Serve with the peanut dipping sauce just before serving.
With their colorful assortment of fresh vegetables and creamy organic peanut dipping sauce, these rainbow veggie spring rolls are a feast for the eyes and the taste buds. Whether enjoyed as a light meal, snack, or appetizer, they will impress with their vibrant flavors and wholesome ingredients. So gather your ingredients and roll up these delightful spring rolls for a delicious and nutritious treat!
